Eggplant Tomato Pie

There is a Pizza place called Rinos somewhere in the suburbs of Philadelphia where I had this combo on a pizza for the first time.  I loved it.  This is an attempt to make a similar one.

Ingredients 
Pizza dough - I get the wheat one from trader joes
Eggplant
Pizza/tomato sauce
Olive oil
Pesto if you like ( optional )

Method
Sautee eggplant in olive oil and some diced garlic. Add italian seasoning or just salt and pepper will be good too.

Roll pizza dough into a round sheet.
Add Pizza/Tomato sauce and spread evenly
Add sautted eggplant on top
Bake @ 475 for 10 mins.

Quinoa Parsley Salad

5 Easy steps!
1) Add cucumber, tomato, parsley, cilantro into a chopper



2) Chop it:)


3) Boil quinoa 1::2 ( one cup quinoa, 2 cups water)


4) Let the quinoa cool, and then add to copped ingredients 


5) Quinoa is ready to be served!

Veggie momo's


This is an interesting Tibetian dish. I am describing the veggie version of it.

Ingredients:

Wheat flour or all purpose flour for making dough
1 Green bell pepper
1 Red bell pepper
paneer cubes 1 small bowl
chopped cilantro
1 small bowl of refried beans
shredded cabbage, carrots
finely chopped green onions, green chilles
Tomato sauce

Utensils:
Mixing bowls, steamer and frying pan

Method:

1. Prepare dough using either wheat flour or all purpose flour and keep it aside.

2. chop, green and red bell pepper. Shred the paneer or tofu cubes. Mix them in a mixing bowl.
3. add chopped cilantro, shredded cabbage and carrot and mix well. Add some salt, garam masala little bit.
4. Now mix it with the mashed refried beans and check the consistency of salt. If required you can add it now.

5. Now start rolling small chappatis with thin edges and thick center. This is because we are going to add the stuffing and make it as a dumpling.
6. Put the veggie stuffing in the middle and grab the thin edges and start to twist to give a nice dumpling shape. Remove the top if needed to make it even.
7. Meanwhile put the steamer on the gas if using an idly or dhokla steaming vessel. Otherwise for the electric steamers like I have, you can put water and start the steamer.

8. Make sure to rub some oil on the steaming plate before putting the dumplings.
9. Steam the dumplings for about 10mins. Remove it from the steamer. You can have the dumplings as is with tomato sauce.
10. Or to make it more spicy. In the frying pan, add dumplings and few drops of oil. Turn them over. Now, add some tomato sauce, green chillies and green onions and remove them in a plate for serving.

Steamed Brussel Sprouts

This vegetable, originally cultivated in Belgium ( which explains the name ) is full of healthy ingredients!
Recently when I was researching diet for healthy long hair, I came across this cabage looking tiny vegetable.
It has everything you want in your food, less fat, protein, vitamins(A,C,B-6) and doesnt taste too bad either! 

I heard boiling it with water will strip off its valuable nutrients, here is the procedure I follow

1) Steam it 
2) Add salt to taste
3) Pepper if you like
4) Some lemon juice to taste if you like

Kati Roll / Frankie

Formula

Dry ingredients 


  1. Choice of Potato / Paneer / Finely Chopped Veggies-  which ever frankie you want to make
  2. Chopped Onion
  3. Chopped Cilantro
  4. Lemon
  5. Salt 
  6. Red Chilli Powder
  7. All purpose flour (if making chapati from scratch)
  8. Mint (if making green chutny from scratch)
  9. Tamarind paste
  10. Salt
  11. Chat powder (if you like the taste of it)

Procedure to make the stuffing

Boil Potato, mash and add red chilli powder, salt, amchur powder (you could add boiled/stir fried viggies if you like)

Procedure to make chapati to roll the stuffing in. (or you can just use tortilla )

Use all purpose flour to make the dough and roll it into thin sheet. (I rolled it into round shape)
Place it on a hot pan flip and cook both sides.

Procedure to make Green chatny

In a blender, add
Green chilli
Salt
Little tamrind paste
Little onion
Cilantro
Mint leaves (if you have)
Come lemon juice and blend with little water to make it into a paste.

Final procedure

Add the stuffing, chopped onion, cilantro, and some lemon juice and chat powder on top of chapati and fold the ends and roll it like below.

Banana Walnut Bread



It's the all new improvised Banana Walnut Bread.

Formula 


2 Cups granulated sugar
1 Cup softened butter
6 ripe bananas, mashed  (approx 3 cups)
4 eggs, well beaten
2 1/2 cups cake flour
2 teaspoons baking soda
1 teaspoon salt

Preheat oven to 350 degrees.   With an electric beater, cream together sugar and butter until light and fluffy.  Add bananas and eggs, beating until well mixed.  Sift together remaining dry ingredients THREE TIMES and blend with the banana mixture until JUST blended, don't overmix.  Pour into two lightly greased 5"x9"x3" loaf pans and bake at 350 degrees for 45 - 55 minutes; until a toothpick inserted in the center of the loaf comes out clean.  Turn loaves out onto a rack and let cool.   If you are going to use these for gifts, you might want to use 8 small foil loaf pans (check for doneness at 35 minutes) or a large bundt pan. Add  wallnuts on top.
